Food: Classy chicken

I’m not quite sure what it is about this recipe that gives the chicken its name. When it came down to serving, I wore my huge oven gloves and carried it to the table in a proud motherly way. It didn’t really matter that the chairs that should have been filled with rosy-cheeked children were empty, I’ll assume that my IUD’d uterus was busy flushing away a blastocyst, that’s enough to tickle the maternal instincts for now.

The preparation was quite simple. Brown off some chicken, throw in some veg (in my case; onion, garlic and a pepper), throw in a casserole dish, add miso mixed with coconut milk, then add some small broccoli florets and some chopped asparagus and top with cheese (Swiss, in my case). 25 minutes of oven time later and we had some delicious chook.

The flavours mixed well and the taste did not disappoint. The only thing I would have done differently was to caramelise the onions beforehand to get more out of them, and perhaps added some lentils to absorb some of the remaining fluid. Good for a Sunday evening.
